What Are the Ingredients Needed for Making A Good Efo Riro?
The ingredients for making nice stewed spinach include; three large red peppers, two scotch bonnet, one very small onion, half cup of palm oil, two tablespoons of blended crayfish, half cup of stockfish (usually about two handfuls), one bouillon cube, one dried prawn (about a handful), two tablespoons of locust bean, one onion, one brown of beef (could be a mixture of beef, cow skin, and tripe), and finally, your blanched spinach.
How to Make Efo Riro
Preheat the Palm Oil
Some people prefer their palm oil hot, rather than bleached. Whatever choice you make, ensure to add the diced onion. Stir and fry at the same time, till it becomes golden brown.
Add the Blended Peppers
Add the blended pepper and fry, until you are satisfied with the thickness of your sauce. Also, if you love your pepper coarsely blended for the stewed spinach, then ensure to use a food processor rather than a blender. This will definitely have that coarse consistency.
Season with The Stock Cube
It’s time to season your sauce with the stock cube, after which you add your crayfish, locust bean, and finally, salt to taste. You can now stir until the whole thing is well blended.
Add Your Meat, Stock Fish, And Dried Prawn
After adding your meat, stockfish, and dried prawn, add some water to thin out the sauce. Afterward, cover it up, and allow it to come to a simmer.

Important Notes to Take When Making Efo Riro
Ensure you blanch your spinach before stirring them in the sauce. You can actually do this by adding the sliced spinach to a bowl of hot water, depending on the quantity. After pouring it into hot boiling water on high heat, immediately take it off, immediately notice it has reached its boiling point. The next thing to do is pour the spinach into a sieve and rinse it under cold water to stop the cooking process. Don’t forget to drain off as much water, as you can from the spinach, as excess water may cause your stew to be watery.
Also, remember not to burn the onions when frying them. Once you notice it has turned a bit brown, continue with the rest of the process immediately. Although spinach stew is not a vegan stew, you can use fried tofu or mushroom for a vegan version.
